Kanji Kul (Traditional Coorg Rice Porridge)

Serves 4


Ingredients

1 Cup Rice (any type)

4 Cups water


Method

Roast rice on a cast iron griddle for 5 minutes. Transfer to a pressure cooker or a rice cooker and add the water. If using a rice cooker, stir every 3 to 5 minutes till it is cooked soft (sometimes the rice cooker settings might click the cooked button sooner than it is cooked in case of kanji kul, due to the excess water in it.)

In a pressure cooker allow to cook for 1 whistle. Only open the lid once all the steam passes through.


Serve hot.
