Chicken Scarpariello with Sausage

Serves 5


Ingredients

4-5 Chicken breast fillet

1/4 Cup All purpose Flour, alternatively use Almond flour if you want to make it healthier

2 Tbsps Olive Oil

2 Sprigs of Rosemary and 2 sprigs of Thyme

4-5 Garlic Cloves, minced

2 Tbsps Lemon Juice

2 Cups Milk

1/2 Cup Cream

3-4 Small or medium sized Pork Sausage

5-6 Medium sized Tomatoes

2-3 Large Chili Peppers (Green or Red), these are the ones which aren't spicy

1 Tsp Salt

1 Chicken Stock Cube

1 Cup Spinach or any vegetable of your choice (this is completely optional)

1 Tsp Green Peppercorns

1 Tsp Pepper

1 Cup Water


Method using a Stove


After cleaning the chicken, lightly coat/ dust it in the flour and keep aside. Heat the oil in a flat and large skillet, after a minute insert the coated chicken breasts. Keep on medium flame and turn golden brown on both sides. Remove and set aside


In the same skilled, add garlic and sautee for 1 minute on low flame, then add the sausages and fry them for a few minutes, feel free to add a little oil or butter so that it doesn't stick to the bottom of the pan.


Now add the tomatoes, spinach or other vegetables and saute for another 5 minutes. Add the roemary, stock cube and a cup of water. After a minute add in the peppercorns, the chicken breast and the peppers. Add the lemon juice and let this simmer for 15-20 mins on low flame.




Scarpariello is usually made without milk or cream, but I added some to my recipe.


After this add in the milk and cream with salt and pepper, please check for taste before doing so. Keep stirring for a few mins and then turn off the stove.
